Healthy grilled cheese sandwiches

Who doesn’t love a grilled cheese sandwich? It’s the perfect comfort food and goes brilliantly well with tomato soup! Below are two healthy approaches to grilled cheese sandwiches with some veggies sneakily added! These sandwiches are great for breakfasts on the run or lunch time fun.

 

Avocado, Cheese and Spinach Grilled Cheese Sandwich:

Ingredients

  • 2 cups shredded cheddar cheese
  • 4 slices of whole wheat bread or rye bread
  • 2 cups chopped spinach
  • 1 chopped tomato
  • 1 tsp. of each – ground mustard, pepper, seasoned salt, onion powder, garlic powder, paprika or any preferred spice
  • Butter
  • 1 avocado

Instructions

  1. Cook the spinach slightly-be sure not to overcook as it becomes to soggy
  2. Butter one side of each bread
  3. Cut the tomato and avocado
  4. Mix all the spices with the shredded cheese
  5. Sprinkle the cheese on top of the bread
  6. Add the spinach, sliced tomatoes and avocado slices on top
  7. Sauté in a skillet for 3 minutes on each side.

Grilled Cheese And Boiled Egg Sandwich:

Ingredients

  • 2 slices whole wheat bread or rye bread
  • 1 hard-boiled egg
  • 1 cup shredded cheddar cheese
  • ⅛ teaspoon dry mustard
  • ⅛ teaspoon paprika
  • Black pepper
  • Salt
  • Butter

Instructions

  1. Peel the hard-boiled egg and slice.
  2. Stir the dry mustard, paprika, a pinch of black pepper and the shredded cheese together.
  3. On one of the slices of bread lay out the slices of egg.
  4. Top the egg with the shredded cheese and add the other slice of bread to create a sandwich.
  5. Sauté in a skillet and cook over low heat on one side until it’s toasted, flip and cook the other side until it is also toasted.
  6. Be certain the cheese is fully melted before serving.
