Easter’s just around the corner and although the world is going through an unknown and scary phase with the current Covid-19 pandemic, it’s usually a time when kids want to have fun and want to eat all the chocolate they can get their hands on! There are plenty of treats that are healthy and delicious to. Take this time to show your children that eating healthy doesn’t have to be boring. With the kids being at home, get them to help you make these goodies and keep them busy! I hope you and your kids enjoy making these simple yet yummy treats!
PEANUT BUTTER OATMEAL EGGS
Ingredients:
- 2 ½ cups of rolled oats
- 3 tbsp of peanut butter
- ¼ cup maple syrup or honey
- 6 tbsp milk of choice
- 1 tsp vanilla essence
- Sprinkles and chocolate chips for decoration (optional)
Method:
- In a bowl, mix all wet ingredients-maple syrup, peanut butter, vanilla essence and milk.
- Add in the oats and mix thoroughly. Let your kids dig in and use their hands for some fun!
- Add in the chocolate chips and/or sprinkles.
- Roll them into small oval shapes so as to resemble the shapes of eggs.
- Place in the fridge for an hour and enjoy!
CARROT CAKE OATMEAL COOKIES:
Ingredients:
- 1 cup rolled oats
- ¾ cups whole grain flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup chopped walnuts
- 2 tsp melted coconut oil
- ½ cup maple syrup or honey
- 1 egg
- 1 tsp vanilla essence
- 2 medium carrots, grated
- 2 tsp fresh ginger, grated
- Add ins- raisins or chocolate chips
Method:
- Mix the flour, oats, baking powder, walnuts and salt in a bowl
- In a separate bowl, whisk the egg. Add coconut oil, vanilla essence and maple syrup.
- Add the dry ingredients into the wet ingredients.
- Mix in the grated carrots and ginger and raisins or chocolate chips.
- Pre-heat the oven to 180 degrees Celsius.
- Line a baking tray with parchment paper and using a spoon or scoop, scoop the dough onto the baking tray and flatten into the shape of a cookie.
- Bake for 15 minutes.
